Tomato Basil Soup

Makes: 2 servings
Prep: 15 min Cook: 15 min

ingredients:

2 tablespoons (30g) 36% cream

1/4 cup (40g) chicken broth (fat free)

1/8 cup (12g) onions

1 cup (180g) tomatos

2 teaspoons (10g) tomato paste

1/8 cup (16g) cheddar cheese

1 1/3 cups (106g) KetoCuisine™

2 tablespoons (22g) butter

Pinch of basil

Pinch of parsley

Pinch of salt

directions:

  1. Chop carrots, onions and tomatoes.  Shred cheese. Set aside

  2. In a saucepan sauté onions, carrots in butter until tender. Stir in tomato

  3. Cover & simmer 10 minutes over medium/low heat

  4. Remove from heat, mash/purée well

  5. Blend in broth, cream and tomato paste

  6. Add spices

  7. In another bowl blend KetoCuisine™ with 1 cup water then add to soup

  8. Return to heat through

  9. Remove from heat and divide into 2 bowls

  10. Sprinkle with shredded cheddar cheese and serve

tips:

  • Let soup rest while spices blend

  • May add more water for thinner soup
